This is one of those “I can’t believe I’m posting this non-recipe” recipe posts. It’s just a matter of cutting a few things up and tossing them together. On the other hand, when I find something I love (and feel good about eating) I can’t help but share. If you have a Wegmans or Whole Foods nearby, this is a good recipe shop in the bulk aisle – a handful of this, a handful of that.
I searched around the web and found out that some call this dish a monkey salad – but I’m hesitant to go with a name because there’s a lot of room for ingredient variation. Consider this more of an inspiration post, one that you can tailor to your favorite nuts, fruits and pantry ingredients. I also think a cup or two of almond milk would make this dish KILLER, almost like a fruity breakfast cereal.
Ingredients:
1 Banana
Additional fruit(s): I tossed in chopped dried dates, but fresh berries would be a great complement
Nut(s) and seed(s): I used walnuts and raw sunflower seeds
Shredded coconut
Nut butter(s): I topped mine with almond butter and dark chocolate almond butter
Cinnamon
Directions:
Chop your fruit into bite sized chunks and combine in a bowl.
Top with coconut, nuts and nut butter.
